What is your "Go To Vegetable"

I'm not talking about a list, I would like to hear your #1 favorite vegetable and how you prepare it. Anyone who's read my posts knows I struggle to get enough vegetables (even though I'm eating more now than I ever have in my life.)

Or think of it this way - what vegetable dish would you make if you were hosting Thanksgiving dinner for your family?

Please include the recipe or a link to it if possible.

Go to veg. is Romaine lettuce and Green Beans. Sorry I know that is 2 but I can make aquick salad or eat a lettuce wrap in a sec. If I am having a "meal" it is easy to prepare Green beans and I love them.

For me, its a simple cauliflower & cheese sauce. Very rich, super creamy and loads of veggie carbs!

I experimented and now have it down to a tee! One serving is 30g of extra thick cream (USA heavy cream?) in a small dish with 56g/2oz of mature cheddar grated cheese. Mix together and then in the microwave for 10 seconds at a time with a stir. Within 40 seconds you have THE most gorgeous sauce which can be served alongside and spooned out over steamed cauliflower.

Alternatively, add a little water to the sauce before heating for a more runny consistency which can then be poured over smaller florets until all are coated.

This can then be topped with a further 2g/1oz cheese and grilled too!

This is a hit with everyone I have served to so far.

Simple - tasty - filling - induction friendly!

The caulifower "mashed potatoes" is my favorite.
This would be a good dish for Thanksgiving - one head of cauliflower makes pretty many servings.

Mine are roasted asparagus... coat fresh,not canned asparagus in evoo(extra virgin olive oil) salt and pepper... roast on sheet pan in oven on 375-400 till golden brown. Deelish!

Mashed Brussels sprouts.


I boil them til soft then drain and add butter and turn on med low and let them simmer in the butter and stir, They start to fall apart and get really creamy and sweet.

They are wonderful! I have not met anyone who did not like brussels sprouts that I made them for and they did not eat them.

I made 4 bags last year and it was gone!

I like turnips! Especially when roasted with whatever meat I happen to be cooking. Goes with beef, pork, or fowl.

Mine is also asparagus, but I put it in a frying pan with butter and garlic. It takes about 5 minutes to cook and the tips get nice and crunchy. Yumm! Great with eggs and bacon in the morning.

Asparagus also, brushed with butter, sprinkled with parmesan. Also broccoli with cheese sauce, I measure the serving size of Velveeta for 3 carbs, add just a dash of cream and microwave, then pour over hot steamed broccoli:) I've found a lot of things on Linda's lowcarb recipe website, you can search for veggie dishes there if you like.
