Egg Muffins To Go ...

Quick & easy Egg Muffins to make now and take later.

This is the basic recipe but I sometimes add bacon or left over meats to the recipe. Also adding onions and mushrooms along with the peppers is HEAVENLY. You can add just about anything. They are REALLY YUMMY!

Ingredients

15 Large Eggs
1 Green Bell Pepper
1 Cup Shredded Cheddar Cheese
1/4 Cup Feta Cheese (Optional)
Garlic Seasoning and Crushed Red Pepper to taste.

Directions

Preheat oven to 375 F.

If using a silicone pan, spray with non-stick spray. If using a regular muffin pan, use 2 liners.

Beat eggs in a bowl. Add diced veggies and cheese. Add garlic seasoning to taste. Pour into muffin tins filling 2/3 full. The muffins will rise.

Bake 25-35 minutes until muffins have risen and are slightly browned and set.

Muffins will keep at least a week in the refrigerator without freezing. Egg muffins can be frozen and reheated. For best results, thaw in refrigerator before reheating. Microwave on high about 2 minutes to reheat.

I am even giving you the counts guys. It can't get any easier then this. :)

Is this sorta like a simple crustless quiche? It sounds great!! Also a great to get veggies for breakfast when you eat on the go... Thanks for posting!

Good to see you. How are you doing?

Yes! I suppose you can call it a "simple crustless quiche." I got so tired of hard boiled eggs that I almost gave up on eggs entirely. Thank goodness I didn't, because I absolutely luv these little egg muffins. The variations are endless and that makes it fun. My kids have a favorite. It is chopped tomato, mozzarella, and pepperoni with basil. Me, I luv them all.

Oh yeah, I could see all the different things you could do! Althogh my kids think they h@te eggs, and one swears he won't touch cheese (even tho he loves pizza LOL), so they prolly wouldn't touch it, but that's ok, more for me!! ;)

Thanks for asking Dana, I'm doin' alright I guess, except I'm still bouncing around the same 2 pounds I have been, and if I could just break it and lose just ONE more pound I can move to Pre-M. Oh well, I'm feeling good so no rush I guess huh!

Cerene,

I am doing much better. Gave up on stressing over my numbers and the scale. Weighed in today @ a 2.1 gain from a 2.6 loss the other day. Didn't get angry or frustrated or stressed out over it. I actually laughed at it. It's become a little game between me and the scale. Next time I win!!!! LOL!
