Hi Everybody!
I think I have finally perfected my cookie recipe. This batch taste GOOD. So I'm gonna share it with ya's. Man I had to eat a lot of "not up to snuff" cookies the last few weeks.
For those who want their fiber but aren't really into the MIM EVERY single day, I have created this lovely alternative. Do be warned that I use margarine because of an intolerance for butter. After the recipe I will give the numbers both for using margarine as well as the equivalent amount of butter.
PUMPKIN FLAX COOKIES - INDUCTION FRIENDLY
In a large mixing bowl:
1 stick of oleo (you could use butter)
16 tablets of saccharin (equals 16 pkg splenda)
1/2 C flax FLOUR
Let the oleo warm a bit then cream together til smooth. Now add:
15 oz pumpkin (NOT pie filling)
2 egg
1 tsp vanilla
Grab a whisk and beat the heck out of it. Now add:
1 1/2 C flax FLOUR
1 tsp baking pwd
2 tsp apple pie spice (you can use pumpkin pie spice if you prefer)
Stir in the dry ingredients til well mixed.
Drop by teaspoon on ungreased cookie sheet. Bake at 375 for 30 mins, 35 if your oven is slow. Be sure to preheat your oven or the first batch will NOT be cooked al the way through!
These bake up just like regular cookies, store in refrigerator in a sealed container or ziplock.
Number of cookies will vary depending on what size you make them. My batch made 35. The numbers below are for the ENTIRE batch. To get per cookie numbers just count the cookies you get from the batch and divide that into each of the numbers. Don't forget that you get VEGGIE carbs from these cookies as well as fiber!
Cookies made with oleo:
Calories 3074
Fat 250.4g
Protein 113.4g
Total Carbs 167.6g
Fiber 140.2g
NET carbs 27.4g
At 35 cookies I get 2.5 vege carbs for 4 cookies when made with oleo.
Cookies made with butter, unsalted:
Calories 3088
Fat 253g
Protein 114.1g
Total Carbs 165.5g
Fiber 140.2g
NET carbs 25.5g
The above numbers do NOT include carbs for the Splenda. Be sure to figure in the carbs for those splenda's for the batch. I totally forgot about that as my saccharin tablets are no carb and no filler. All the numbers are based on the saccharin tablet sweetener!
These numbers were arrived at by using a blank day on my FitDay and entering all the ingredients seperately. I hope you like the cookies as much as I do. I have them for breakfast every day with my unsweet tea.
To make flax FLOUR I tossed my flax meal in my coffee bean grinder for a few seconds. It worked VERY nicely :)
WARNING I have by habit reduced the sweetener in this recipe by HALF! I do not have a sweet tooth at all. If you find they are not sweet enough for you then next time add more sweetener, but be sure to count all those extra carbs!
The next batch I make I will weigh and translate into grams for those on the metric system. As soon as I do I will post the metric weights in this thread also.

TT sounds great and I will bake some as soon as I get a real kitchen.
I am living in 5th wheel and only using NU-WAVE and electric skillet. No reason just to lazy to get propane tanks filled. Man they are heavy and Propane is so expensive.
But I bet these cookies will be great.

Is the apple pie / pumpkin pie spice cinnamon?

I'm not familiar with OLEO. What is it, and why use it instead of butter if the calorie and fat contents are so similar?
bimmer - I am butter intolerant. Oleo is margarine.
Jacq - I have done these using apple pie spice or pumpkin pie spice, or a pumpkin pie spice & cinnamon blend (I ran out of the pie spice LOL). You could use any of them I think. The pie spice is a blend that includes cinnamon, I buy it already blended, but plain cinnamon should work also.
Dana - hope you get into a real kitchen soon! Being able to bake really relieves the tedium of the veges LOL.

These cookies are awesome!!! They are easy and you get lots! They taste great warm or the next day. They are kinda like the Date or apple type sort of cookie that Voortman's makes which leads me to think in the fruit rung of OWL a lttle fruit pushed in the center would be awesome!
They don't spread out so you can keep them close together on the sheet. I tried some just dropping them and some pressed down a bit, they tasted the same, so it's a preference on how you like your cookies. If I was going to add fruit to them I would drop them and press the fruit into the middle.
Jacq: I used just plain old cinn. It worked out awesome!

Oh TT - I can't wait to make these with the flour now. I didn't even think of that.
I used the ground flax, with the butter and pumpkin pie spice. Instead of your tablets or granular splenda I just used liquid splenda (0 carbs) and they still came out great! I LOVE THESE!!!!!
I only wanted to do 2 cookies sheets worth so I made 24 cookies and they came out to .79 net carbs each with .58 veggie carb each. Yum - VEGGIE FIBER GREAT TASTING COOKIES - what more could an Atkineer want? lol

The ingredients in Pumpkin Pie Spice are:
1/2 teaspoon ground cinnamon
1/4 teaspoons ground ginger
1/8 teaspoon ground nutmeg
1/8 teaspoon ground allspice
Apple Pie Spice is:
1/2 teaspoon ground cinnamon
1/4 teaspoons ground nutmeg
1/8 teaspoon ground allspice
1/8 teaspoon ground cardamom
