CALLING ALL ATKINS FOODIES - THIS THREAD IS FOR YOU!!! I won't bore you with the details as to why I've decided to switch things up a bit here but I've decided that we're gonna take two weeks and try something a little different...a CONTEST!
Here's how it'll work:
1. Earn points ("how to" will follow)
2. At the end of two weeks (July 27), I will tally the points earned, announce the winner and then send him/her a prize! (Clarification: posts through midnight July 27 will be counted.)
How to earn points:
1 pt: visit past "Atkins Recipe Challenge" threads, try the recipes, and post a review.
2 pts: post a recipe in any of the past threads (must include a clear title, a list of ingredients, and directions).
1/2 pts: previous posts (recipes and reviews only) will be rewarded too!
*You may post multiple reviews and multiple recipes.
*Links to recipes do not count, the recipe must be written out - but citing your source is helpful.
*If you don't have any ideas, do a google search for "low carb recipe" and "ingredient x" and you will likely find multiple recipes.
Here is a list of all the challenge themes so far: Bell Peppers, Broccoli, Cabbage, Cauliflower, Coconut, Crock Pot, Cucumbers, Dips, Easter, Green Beans, Rhubarb, Salad/Salad Dressing, Spaghetti Squash, Spinach, Vegetable Casseroles, and Zucchini!

Good idea again Bonnie, I think I have alot of the challenges in my favorites also. Will have to check it out.

Turns out I was pretty busy - just not tallying points. Sorry guys, life happens and I just haven't been able to get on here since Jul 20. I was feeling pretty bad about leaving the contest winner in limbo - until I logged in today to find that no one entered :(
Oh well, this is how things go and the whole "Atkins Recipe Challenge" thread was an experiment. One, I believe, that we can call an end to. Thank you to all who participated. I hope you grew in your culinary adventures as I have. Happy trails as you continue your low carb way of life!

Atkins is having it's own Recipe contest with their new pasta and baking mix. Lots of good prizes too!!

Thanks for the well-wishes. I am doing great. Not much time to hang around the board any more but still following a dr-modified (for health reasons) form of Atkins. So far I've lost just over 50 lbs (since Nov 08). It's been slow-going but I am happy with how I am feeling and that's the most important thing. I appreciate the foundation I got from starting with Atkins and from the support of this board. In fact, I stopped back today to see if I could find a recipe I hadn't made for a while but was hoping to make for dinner!
