Atkins Cuisine Bread




Use the Atkins recipe to make All Purpose Low-Carb Baking Mix for this recipe.  This recipe makes 18 slices. If you slice it thicker, the carb count will be higher.

  1. Heat oven to 350°F. Spray loaf pan with olive oil spray and set aside.
  2. Blend together baking mix, baking powder, salt and sugar substitute in a large mixing bowl. Add water and oil gradually, stirring with a spoon or spatula to combine into a dough.
  3. With a spatula, take the dough out of the bowl and place on a clean surface lightly coated with olive oil spray. Also coat hands with spray and gently shape the dough into an 8-inch roll.
  4. Carefully place the dough into a 4 x 8 x 2.5 inch loaf pan.
  5. Bake at 350°F for 60 minutes or until bread sounds hollow when tapped.
  6. Place on a wire rack and allow to completely cool before slicing.  Makes 18 servings.
