Fresh Broccoli Salad

Directions

  1. Cook bacon until crisp.  Drain on paper towels then chop.    
  2. In a medium bowl combine the broccoli, celery and bacon.  Set aside.  (Note:  if the taste of fresh broccoli is too strong for your liking, try boiling it in water for 30-60 seconds then quickly immersing in ice water.  Be sure to towel dry the broccoli completely before use or the salad will be too watery).
  3. In a small bowl whisk together the mayonnaise, cider vinegar and granular sugar substitute.  Add to broccoli mixture and toss with spoons until thoroughly coated.  
  4. Serve immediately or refrigerate for up to 2 days.
